La Carbonara, Pancetta, and Egg Pasta

Good news! This recipe will be ready in fifteen minutes or less! First, let’s start with the ingredients.

  • Two tablespoons of olive oil
  • Three large eggs (room temperature)
  • Three to four tablespoons of grated parmesan cheese (fresh)
  • Two-thirds cup of cubed pancetta
  • Three cups of cooked pasta (your preference, long or short is okay)
  • If you want, grab hot pepper flakes

After you gather your ingredients, here is how to cook them.

The Recipe

First, add the olive oil and pancetta to a large frying pan. If you want hot pepper flakes, add them too.

Stir the pancetta often so that it does not burn. You want the pancetta cooked but not crispy. You can shop for pancetta here.

While cooking the pancetta, boil a large pot with water and add a bit of salt. Cook your pasta in it.

Then, while the pasta is cooking, beat the three eggs in a small bowl and add the fresh parmesan. Mix well.

When the pasta is cooked, turn the heat for the large frying pan back on with the pancetta. Put it on a medium-high. Add the drained pasta and combine them well for approximately twenty to thirty seconds.

Remove the pan from the heat. Add your egg mixture. Toss it all together, mixing constantly.

Add one or two tablespoons of pasta water for a creamier texture. If you wish, top it with parmesan and serve immediately.
